When we created LimeRed in 2010, we set out with one goal in mind:
Elevate bubble tea using only the best and highest quality ingredients.
Traditional bubble tea (or boba) shops tend to use some ingredients or techniques that we don’t agree with:
We don’t EVER use evaporated milk powders
Malted Milk Powder - Long shelf life, easy preservation
Cooking Tapioca Bubbles in Boiling Corn Syrup Water - Ordering “no sugar” drinks actually results in you getting a significant amount of sugar!
Low culinary grade or fake Matcha Green Tea - Cuts costs
Artificially Flavored Fruit Syrups, Powders - No need to buy fresh fruit
Using Corn Syrup instead of Real Sugar - Easy to prepare and use
Not using tea in some drinks - Cuts costs, easy to prepare (i.e. only using jasmine powders or water and sugar)
Picture this. If you’re being health conscious but want your fix of boba, you order a tea with “no sugar”. But you may be getting over 20 ounces of sugar, because of the way the Tapioca bubbles were prepared! We sweeten our bubbles with honey, so not only is it healthy, it’s delicious.
We’ve addressed these issues by doing the following.
1/4th of a real pineapple goes into each pineapple drink!
Using fresh whole milk from local farms
Cooking Tapioca Bubbles al dente in hot water, adding honey and brown sugar to taste afterwards (no corn syrup)
Using only Premium-grade Culinary Matcha Green Tea
Using real fruit in our Fresh Fruit Category of drinks (cold-pressed, fresh-squeezed and pureed fruit)
Creating our own sugar by melting high quality brown sugar in water
Always using a base of real tea in our drinks. These bring out a floral flavor in each drink, enhancing the experience.

Disclaimer: We still do produce some classic teas with fruit syrup and powder, such as Peach Tea or Taro Milk Tea. But the other ingredients and preparation remain adherent to using only freshly brewed teas as a base, no corn syrup, and local farm milk.
